Why is it that we still categorize dogs in various ways, such as behavior and temperament, but in our overly PC society we can no longer talk about people the same way?

Remember when you could talk about the ...well... guy... with the thing... who liked to do that thing a lot... because he was so good at... doing that stuff... that only they can do..
